~♥Hello Blogging Friends♥~

I hope you all are doing well...I know that I have been MIA this past year, but I'm hoping that will all change with this upcoming new year.

Just like many of you, I am trying to get ready for Christmas...for some reason this year it has been slow-going...the days are counting down so I'm trying my darndest to get moving.  I've been decorating the past couple of days.  I've changed some things up from what I've done in the past.  I'm hoping to get some pictures posted soon!

This picture is from my annual Christmas Cookie Exchange 2012.  It's so much fun to get together with friends.  This is the 4th year for the
exchange at my home.
My daughter and I will be baking cookies this week for the upcoming exchange on
Saturday, December 21st!

Thanks for stopping by blogging friends!

~♥ Blogging and Baking ♥~

Good morning, blogging friends...well, I'm officially back to blogging...after a much needed break and lots of prayers I am returning...how often I will post remains to be seen...thank you to all of you who sent emails and who remained Followers of my blog even with my absence...it means a lot!

I'm sure most of you are on the "Pinterest" bandwagon...it really is a wonderful site and I've found so many great recipes.  I recently found myself with some over-ripe bananas.  Usually I would make banana nut bread, but wanting to try something different, I went to Pinterest.

This is the most A-M-A-Z-I-N-G cookie ever!  It was really easy, too!  And, I'm all about recipes that are easy...no complicated cookies for this chick...

Sure wish you could taste them...you definitely can't eat just one!

~♥ Apple-Pecan Crisp ♥~

I have always been fond of crisps especially during the fall months...there's nothing better than filling your home with the wonderful smell of something baking in the oven!

~♥ Apple-Pecan Crisp ♥~
from Betty Crocker Fall Baking Oct/Nov 2009

2/3 cup maple-flavored syrup (I used the real maple syrup)
1/4 cup all-purpose flour
1 tsp. ground cinnamon
8 large baking apples, peeled and sliced
1/2 cup cold butter, cut into pieces
1 pouch (1 lb. 1.5 oz.)  Betty Crocker oatmeal cookie mix
3/4 cup chopped pecans

  • Heat oven to 375 degrees.
  • In large bowl, stir together syrup, flour and cinnamon until blended.  Add apples; toss until evenly coated.  Spread in ungreased 13 x 9 inch (3 quart) baking dish.
  • In same bowl, with pastry blender, cut butter into cookie mix until mixture looks like coarse crumbs.  Stir in pecans.  Crumble mixture over apples in baking dish.
  • Bake 30 minutes.  Very loosly cover with foil; bake 10 minutes to 15 minutes longer or until apples are tender.
As they say, "An apple a day keeps the doctor away."  What a wonderful way to get your apples!

ENJOY!!!
